The culinary creation last night made a happy marriage with B.S. champagne. I have to thank the team at Cristal Room for catering for my special preferences.
.
My favourite- TADA! Cabbage!! Oh my Gosh, owing to my Asian background, the Cabbage last night definitely married a French, in a sense that it was curated like a dumpling with all the Française essence.
.
The seabass, of course, is traditional, elegantly hidden under the silky foam.
.
The pairings were very well thought out, thank you again for a splendid evening. 🫶🏽

All champagne showcased similar house style of freshness and slightly use of oak. The 2012 was drinking very young, vibrant yellow fruits kneaded with sharp minerality, it is citrusy, tart and refreshing.
.
Le clos Saint Hilaire 2007 was definitely the showstopper for me, it is the contrast to Nicolas François, there was so much more depth and complexity in this aged pinot.

Vertical Tasting of 2015, 2013, 2012, 2008 and Plenitude 2 2006.

2015 is young, citrus with bright yellow fruits while 2013 is comparatively linear with higher minerality.
.
2012 and 2008 are both superb vintages, despite the difficulty growing season to begin with. 2012 is more opulent with warm fruits and mazipan, slightly toasty. 2008 holds more finesse, the wine is expressing more tertiary flavours with the gaminess on the nose, it is by far my favourite vintage.
.
Plenitude 2 2006 - while saving the best for last, I think it is a bit under the shadow of 2008. Elegant as it is, it is however a little thin and reserved on the palate.

Originally made for Tzar Alexander II, drinking it makes me feel regal!

Picked from 7 Grand Crus across Montagne de Reims, Grande Vallée de la Marne and Côte de Blanc, there is a balance between warm fruits and minerality from the warm Pinot, 60%, and terroir-driven Chardonnay, 40%, from Mesnil-sur-Oger.
.
The straw lemon colour reflects the youth of wine. The nose expresses generous brioche, puff pastry, toasted almonds, concentrated, once the wine warms to proper temperature, it is citrusy and oozing delicious peach, melon and honeycomb.
.
It is fresh but round on the palate, and such an elegant wine to gradually evolve. Marmalade, lemon sorbet meringue, bright yellow fruits and toastiness!
.
It is still so young and will be drinking with extensive longevity! J’adore!

An iconic champagne family in Aÿ since 1625, this lovely Fût de Chêne is generous and rich, layered with ripe peach and pineapple, toasted almonds, puff pastry dough and long finish.
.
Roughly 70% Pinot and 30% Chardonnay from grand gru parcels, assemblage with 1/3 of perpetual wine tracking back to 1990 and the rest based on 2016 vintage. This champagne is aging gracefully and developing sumptuous fruits and creamy palate. It is definitely a wine to be enjoyed for the next ten years and beyond.
